The IGP Haute Vallée de l’Aude is an appellation recognized for its wines and vineyards located in the heart of the Cathar country in Occitanie. Since its recognition, this flagship appellation of the upper Aude valley has forged a unique identity thanks to its high-altitude vineyards, which allow for a slow maturation of the grapes, resulting in balanced and aromatic wines.
The wines of IGP Haute Vallée de l’Aude are produced from a variety of local and international grape varieties. For red and rosé wines, Merlot, Syrah, Cabernet Sauvignon, Pinot Noir, Grenache, and Cinsault are commonly used, while the whites are mainly made from Chardonnay, Sauvignon Blanc, and Chenin Blanc.
Red Wine: The red wines of IGP Haute Vallée de l'Aude feature a ruby red color. Their aromatic palette highlights ripe red fruits (cherry, raspberry), with spicy and sometimes woody notes. On the palate, they are supple and round, with a freshness provided by the altitude.
Rosé Wine: These rosé wines display a pale pink color and a nose dominated by aromas of red berries (strawberry, redcurrant) and citrus (grapefruit). On the palate, they are fresh and light.
White Wine: White wines have a pale yellow color with golden reflections. The nose is complex, blending floral notes (white flowers) with exotic fruits and citrus. On the palate, they are fresh, mineral, and fruity.
