VEGAN DISHES: WHICH WINES TO PAIR WITH THEM?

Luckily for enthusiasts, wine pairs well with both vegetables and meat and cheese. Here are two wine suggestions that will perfectly complement 100% vegan dishes.
1. WITH STUFFED ZUCCHINI: A PROVENCE ROSÉ
The vegan diet involves eliminating all animal-derived products from one's diet, including (among others) meat, cheese, and eggs. However, there are certainly recipes that are both flavorful and hearty without these ingredients. One such dish is stuffed zucchini with small vegetables, which is very popular during the summer. This dish calls for a rosé from the south with fruity aromas and delicate tannins. Languedoc, South-West, Provence: you have plenty of options.
The rosé wine By Olivier from Château du Grand Jas in AOC Côtes de Provence will be ideal for this pairing. This wine, both fresh and complex, will complement the soft texture of the zucchini and vegetables, while its aromas of strawberry and raspberry will add a pleasant touch to the southern character of the dish.
2. WITH RATATOUILLE TART: A LANGUEDOC RED
Another dish that enjoys certain success within the vegan community is ratatouille tart. This quintessential summer meal poses a bit of a challenge in terms of pairing with wine. The reason is that its rich composition must balance multiple flavors, from the acidity of the tomato to the bitterness of the eggplant, with the sweetness of zucchini and marinated peppers.
To get it right, opt for a round, fruity wine with silky tannins and a strong character to match the contrasting flavors. The "Les Baronnets" red wine from Domaine de Figueirasse in IGP Sable de Camargue (Languedoc) perfectly meets these criteria.
This wine features a gourmand nose with aromas of garrigue, spices, and black olive that will echo the summery flavors of the ratatouille.
