LUZ VERDE: A TOP CHEF CANDIDATE AT THE HELM

Spotlight on Alexis Delassaux and His Mexican Restaurant, Luz Verde
Luz Verde: Spice Levels to Suit Your Taste
You may have noticed Alexis Delassaux, the Mexican-born chef and owner of the Parisian restaurant Luz Verde, who has made waves in the culinary world.
At just 28 years old, Alexis Delassaux boasts an impressive career. After honing his skills at the Michelin-starred Le Royal Monceau and Frenchie under chef Gregory Marchand, Delassaux opened his semi-gastronomic Mexican restaurant in the heart of Pigalle: Luz Verde. He invited his former colleague, Quentin Zuddas, to join him in this venture.
Two and a half years after opening, Luz Verde has become one of the must-visit Mexican restaurants in the capital. The menu, which changes based on the chef’s mood, features fresh, seasonal ingredients with varying levels of spice according to customer preferences. Currently, two of the restaurant’s specialties include beef tongue tacos and tuna ceviche with radishes and citrus.
Authentic Latino Cocktails
The wine list at Luz Verde is split equally between French and international selections, including Chilean and Argentine wines. "We favor small producers because we enjoy meeting the winemakers directly," says Alexis Delassaux. Of course, Luz Verde also offers a range of 100% Latino cocktails, including Tequila, Pisco, and Mezcal-based drinks, with the standout being the "Frozen Margarita."
If you're up for it, you can experience a culinary evening reminiscent of Jean-François Piège or Philippe Etchebest by trying the cuisine of this Top Chef candidate. Be sure to book a table for lunch or arrive early in the evening (around 7 PM) to secure a seat.
