GILLES AND SÉVERIN CHOLLET: DISCOVER AN EXCEPTIONAL POUILLY-FUMÉ

Gilles and Séverin Chollet: Discover an Exceptional Pouilly-Fumé
As a child, Séverin Chollet loved waiting by the press with his bin full of grapes. This waiting time, just before or after school, was an opportunity for him to indulge in his second passion: football. He would play with the ball against the wall while waiting to place the fruit of his harvest. These memories, along with those of his first grape juices and early steps in winemaking, are his "madeleine de Proust."
Séverin long hesitated between the ball and the grape. As he likes to say, his "football talent" quickly reminded him of his true calling, and it was in the winemaking profession that he found his path.
For our greatest pleasure, the wines he crafts bring well-deserved honor to this legendary Loire appellation, the AOC Pouilly-Fumé, located just across from the equally famous Sancerre.
A Family Legacy in the Heart of the Loire Valley
Gilles inherited the estate and his passion from his parents, Roland and Simone Chollet. Starting from scratch, they created the Domaine Chollet to produce their own wine in Pouilly-sur-Loire. They vinified their first wine in 1960 and over the years, earned numerous medals at the Paris and Mâcon General Competitions (5 Gold, 10 Silver, and 5 Bronze).
Gilles took over the estate in 1989 with his wife Valérie, continuing the family tradition with determination. They were joined in 2010 by their son Séverin, who had recently graduated from studies in Beaune. Together, they work in harmony, producing wines that reflect their family’s signature while adding a touch of modernity.
In 2020, the estate proudly won its first Gold Medal at the Paris Agricultural General Competition.
Authenticity Reflected in Their Wines
Their wines are excellent Pouilly-Fumé, crafted with respect for nature. Their credo is that "by letting the terroir express itself as naturally as possible, we maintain the reputation of creating the best sauvignons in the world."
The Chollet family believes in harmony with their vines and in choosing practices that respect the soil's life, the plant's balance, and the environment. The estate has been certified Haute Valeur Environnementale (HVE3) since 2020. Far from stopping at this certification, the Chollet family embarked on the process of converting to organic farming in October 2020.
We highly recommend tasting their wines, characterized by the softness of their fruits and their bold character.
