History and Identity of Domaine Mas Conscience

Located between Montpeyroux and Saint-Jean-de-Fos, Domaine Mas Conscience draws inspiration from a legend where monks, while asking for alms, would request villagers to give according to their good conscience. Wine and oil were then transported in jars once called "conscience." Certified organic since 2012, the estate was taken over in 2020 by Roman Kocholl and Audrey Bonnet-Koenig, with the expertise of oenologist Claude Gros, to reveal new promising results.

Terroir of the Terrasses du Larzac

The Terrasses du Larzac, located to the north of Hérault, benefit from a Mediterranean climate with hot, dry summers and mild winters. Protected by the limestone cliffs of the Causse du Larzac, this terroir is characterized by significant geological diversity (clay, limestone, pebbles, schist) and wide temperature variations, creating wines that are fresh, complex, and balanced, with excellent aging potential.
