Domaine Louis Dorry: Legacy of the Cluny Monks and Ecological Commitment
Domaine Louis Dorry, a small vineyard of just 0.50 hectares, is situated in a former priory once belonging to the Cluny monks, near the Romanesque church of Buissières. The estate was taken over by Louis Dorry in 2006, following his father's retirement. His small plot of Chardonnay, located opposite the Roches de Vernisson and Solutré, is cultivated without the use of chemical herbicides. After a manual harvest and pneumatic pressing, the cloudy juice is transferred to oak barrels, where it undergoes a slow, four-month alcoholic fermentation.
