The Vineyard
Sébastien Pelard, a farmer from a family tradition since 1640, after 25 years of large-scale farming and a strong desire for renewal and creativity, was inspired by his passion to turn a long-held project into reality: to explore the magic of winemaking and adapt controlled agricultural techniques that favor biodiversity while respecting the environment for sustainable viticulture. Located within the Castillon Côtes de Bordeaux appellation, in the commune of Salles de Castillon, the estate spans 26 hectares of single-block vines, with mechanical weeding. The argilo-limoneux and argilo-calcareous soils are ideal for ripening our grape varieties, predominantly Cabernets (41% Cabernet Franc, 12% Cabernet Sauvignon), and Merlots (47%). The average age of our vines is 40 years. The management of the vineyard is carried out through integrated farming systems within their environment, with the use of green fertilizers that promote biodiversity to produce the best vintages.
Oenological Approach
For our winemaking, we utilize various types of containers, including wooden vats, thermoregulated stainless-steel tanks, and concrete vats. Each container has its own unique properties and qualities, allowing us to have multiple options and possibilities to manage our winemaking process and master fermentation. We focus on amphora aging combined with barrel aging to best preserve the fruit and freshness. Our goal is to reveal, through our expertise, the typicity of Château Canon Montségur wines and, through our creativity, present a modern vision of our vintages within the Castillon Côtes de Bordeaux appellation.
