Founded in 1883 by Jean Cavé, the Armagnac Jean Cavé house embodies more than a century of expertise in the distillation and aging of Armagnac eaux-de-vie. Located in Lannepax, at the heart of the appellation, four generations have succeeded one another, each preserving the excellence and refinement of this artisanal production.

Through meticulous craftsmanship, the house has built one of the finest collections of vintage Armagnacs in the world. Today, under the watchful eye of Henri Cavé, the fourth generation, the team continues this tradition with passion, offering exceptional products to enthusiasts and connoisseurs of vintage Armagnac.

Aging in Oak Barrels: The Art of Time

Once distilled, the eaux-de-vie are patiently aged in carefully selected oak barrels. This process, which can last up to 50 years, allows the spirits to absorb the tannins from the wood and evolve into amber hues with rich woody and spicy notes. Over time, Armagnac from Maison Jean Cavé develops a unique complexity, revealing an aromatic palette ranging from vanilla to dried fruits, with deep, pronounced rancio flavors. When it reaches its peak maturity, it is transferred into demijohns to preserve its gustatory qualities.

In the hushed atmosphere of the aging cellars, a natural evaporation process known as the "Angels’ Share" gradually reduces both volume and alcohol content. The Cellar Master, a true guardian of time, carefully compensates for this loss by adjusting barrel levels and controlling alcohol reduction. This meticulous work ensures a perfect balance between the strength of the alcohol and the finesse of the aromas, resulting in rare and elegant nectars.
