Beware of Wasabi!
In case you’re wondering, no, wine with sushi isn’t an anomaly! While it’s more common to pair sushi with Japanese beer or sake, given that this dish has captivated many French palates, why not add a local touch with some good French wine? The only caveat is that wine isn’t very effective at withstanding wasabi, the bright green condiment traditionally served with sushi. You’ll need to make a choice: the green “mustard” in abundance or the wine and sushi combo. Personally, we’ve opted for the latter. Here are our suggestions for successful pairings.
For White Wine Lovers…
When it comes to sushi, think raw fish, and with raw fish, you need a dry white wine. For sushi, go for mineral wines. Just like shellfish, the flavor of raw fish is acidic with a slight iodized taste. Therefore, choose a wine that plays in the same range. We suggest several options: a Riesling if you’re a fan of Alsace, a Chablis if you swear by Burgundy, or a Côtes d’Auvergne if you have a soft spot for Loire whites.
For Epicureans Seeking Adventure…
Are you more enchanted by rosé than white? No problem, rosé wines can pair well with sushi. Just keep in mind that these Japanese dishes require dry, fresh, and rather crisp wines, leaning towards acidity. So, indulge in a Côtes de Provence or, if you’re up for a sparkling adventure, a Rosé Champagne…
