Red Wine Fondue or Fondue Bacchus
Red wine fondue, also known as fondue Bacchus, is a dish made with seasoned and spiced red wine in which pieces of beef are fried. The wine fondue is also accompanied by a red wine sauce, prepared like a mayonnaise.
This fondue is a compromise between Chinese fondue, where meat is cooked in broth, and bourguignonne fondue, where meat is fried in oil. In this case, the meat is cooked in red wine presented in a fondue pot. Its origins date back to the 18th century.
How to Perfect Your Red Wine Fondue
To perfect your wine fondue, start by preparing your red wine. It should be enhanced with several ingredients, including an onion, shallots, garlic, bay leaves, thyme, salt, and pepper. The red wine sauce is a mayonnaise made with egg yolks, red wine, oil, shallots, mustard, salt, and pepper.
The seasoned red wine is then placed in the fondue pot and heated until boiling. The beef should be cut into cubes and dipped into the wine to cook. You can accompany your red wine fondue with sauces, condiments, vegetables, mushrooms, and potatoes. It’s also possible to make fondue Bacchus with other red meats, such as game or duck.
