A Unique Pairing: Pata Negra and Vin Jaune
This original pairing comes from an idea proposed by the magazine Septième Goût and Maison Roble.
A Fortified Wine for a Refined Delicacy
Originating from Spain, pata negra is a fine, fatty, and aromatic ham whose complex flavor results from several years of aging (which varies depending on the type of pata negra and its region). The process of making vin jaune is similar to that of pata negra. Initially produced as a dry white wine, it is then placed in a 228-liter barrel for six years and three months. During this time, a fine veil of yeast forms on the liquid to prevent oxidation from exposure to air. Both pata negra and vin jaune, stemming from lengthy production processes, are thus made for each other! That’s the theory; now, let’s move to the practice: the tasting.
